Flashback Friday and More

Flashback Friday

{Me, 1982}

Photobucket
Excuse me ma'am! May I see your license and registration?

Clearly my fascination for cars began at a very young age. Since my sixteenth birthday, I've had 4 different cars; I'm just keeping my fingers crossed that Gillian Grace doesn't inherit my predilection for big expensive toys!

Five Question Friday

1. Do you have any nicknames and if so how did it come about?

I have several nicknames. My family calls me Sly (initials of my first, middle, and maiden name); my grandfather calls me Windy because he thinks I talk incredibly fast; my mom has called me Myrtle Mae since I can remember, but why I'm not sure; and my Aunt Helen still calls me Toot to this day. And, no Toot doesn't have anything to do with what the name implies---I'm a lady, remember!

2. What is your birth order amongst your siblings?

I am an only child, so I guess that makes me the first and the last!

Photobucket

3. In a movie of your life, who would play your significant other?

If I could cast anyone to play hubs in a movie of our life I'd choose Ben Affleck. He's always been able to fly under the Hollywood radar and lead a seemingly normal life. He's good looking; is what appears to be a great family man; and has played a lot of very different roles. And though not part of the question, I'd also choose his real life wife, Jennifer Garner to play me.

4. What is currently your favorite song?

My favorite song right now has to be Soul Sister by Train. It's a little over-played, but that doesn't bother me much because Gillian Grace lights up like Time Square every time she hears the opening riff. Hey, hey, hey...

Photobucket

5. Are you saving your money for anything right now? Big or small purchase?

Feels like we're always trying to save money, it's just a little harder now that I'm a stay-at-home mom without an income! There are tons of home renovation projects, like new windows and siding, on our wish list. And of course there's someone's college education to consider. It's too bad money really doesn't grow on trees!

What's for dinner?---No. 1

Oops, I did it again...I waited until Gillybean was awake before beginning today's post. You'd think I'd have learned my lesson after trying to post this way last Friday. Oh well, on to more important things---food!

With a couple of birthdays to celebrate this weekend, including my own on Sunday, this weekend will be busy!

In our family, it's always been a tradition for the birthday honoree to choose the dinner menu. So when Bret asked what I'd like to have for my birthday dinner, I didn't hesitate, Mahi Mahi fish tacos! Even though I'd never even tried a fish taco before our visit to the beach for the Jimmy Buffett concert a few weeks ago, it only took one bite before I was hooked! They are so delish and in my opinion, the perfect light late summer meal!

My parents will be heading over to spend the day, and with my dad's birthday the day after mine, I will be making a special dessert in honor of his big day! Although I'm still on the fence as to which dessert to prepare, I do have it narrowed down to three yummy choices: bread pudding, chocolate fudge pie, or chocolate chip cheesecake. Needless to say, my dad's a big fan of all three!

For our fish tacos, we like to keep it really simple. Bret likes to blacken the Mahi Mahi on the grill using the recipe below. Then using soft flour tortillas, we load up our tacos according to taste and preference---a little cheese, loads of lettuce, a spoonful or two of black beans, and pico de gallo. We always make our own pico, it's just better when it's fresh!

Blackened Mahi Mahi fillet

Ingredients:

4 Tbsp paprika
2 tsp dried thyme
2 tsp dried oregano
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp black pepper
1 tsp white pepper
2 tsp salt
4 mahi mahi fillets, thawed
1 lemon, juiced
¼ cup dry white wine
1 shallot, minced
¼ cup heavy cream
½ pound unsalted butter, cubed and chilled

Instructions:

Mix the first eight ingredients in a shallow dish. Coat both sides of the fish fillets in the spice mixture and set aside. In a large cast iron skillet or griddle, heat a small amount of vegetable oil until smoking. Blacken the fish over medium-high heat for about five minutes per side. In a small saucepan, reduce the lemon juice, wine and shallots until the liquid is almost completely gone. Add the cream and reduce by half. Remove the pan from the heat and stir in the butter a little at a time, making sure that the sauce does not separate. Plate the fish and serve with a couple of spoonfuls of sauce.

Chocolate Fudge Pie
(courtesy November issue of Real Simple)

Ingredients:

Basic Flaky Piecrust or 1 store-bought piecrust, fitted into a 9-inch pie plate
6 ounces semisweet chocolate, chopped, plus more shaved for topping
1/2 cup unsalted butter (1 stick)
3 large eggs
1/8 teaspoon kosher salt
1/2 cup plus 3 tablespoons granulated sugar
1 1/2 cups heavy cream

Directions

Heat oven to 375º F. Place the pie plate on a baking sheet. Prick crust with a fork and line with foil. Fill to top with pie weights or dried beans. Bake until the edges are firm, 20 to 25 minutes. Remove the foil and weights and bake until just golden, 8 to 10 minutes.

Reduce oven temperature to 325º F. In a heatproof bowl set over (not in) a saucepan of simmering water, melt the chocolate and butter.

Using an electric mixer, beat the eggs, salt, and ½ cup of the sugar until fluffy, 4 to 5 minutes. Fold a third of the egg mixture into the chocolate mixture, then fold in the remainder.

Pour the combined mixture into the crust and bake until puffed and beginning to crack, 20 to 25 minutes. Cool for 1 hour, then chill.

Beat the cream with the remaining sugar until soft peaks form. Spread over the pie and sprinkle with the shaved chocolate.

{Tip---The pie can be prepared without the toppings and refrigerated, loosely covered with plastic wrap, for up to 2 days. Top it with the whipped cream and shaved chocolate and refrigerate uncovered for up to 6 hours. Bring to room temperature before serving. }

Chocolate Chip Cheesecake

Ingredients
13 Oreo Cookies, crushed
1/4 cup butter (1/2 stick), melted
2 pounds (four - 8 ounce packages) cream cheese, cool temperature
1 can (14 ounces) Eagle brand sweetened condensed milk
4 large eggs, room temperature
1/4 cup all-purpose flour
1 Tablespoon vanilla
1 1/4 cups mini semi sweet chocolate chips
Optional Chocolate Ganache Icing

Directions

Preheat oven to 300 degrees F. Place a pan of hot water in the bottom of the oven and close the door.

Remove the bottom of a 9- inch springform pan, then line the bottom plate with aluminum foil. Reassemble the pan. Pull the excess foil up and around the pan to prevent any batter from leaking into the oven. Spray sides and bottom with vegetable spray. In a small bowl, mix crushed Oreo Cookies and melted butter together. Pat on just the bottom of the prepared pan.

In a mixing bowl on medium speed, beat cream cheese until smooth ~ about 2-3 minutes. Scrape down sides half way through. Add sweetened condensed milk and beat again, scraping a few times. The mixture should be smooth. Add eggs 1 at a time beating after each addition until fluffy and creamy. Add flour and vanilla and blend. Gently fold in 1 cup of mini chocolate chip chips.

Pour batter into prepared pan on top of the Oreo Cookie crust. Sprinkle the remaining 1/4 cup mini chocolate chips over the top of the cheesecake, and bake at 300 degrees for 65 - 75 minutes. The center of the cheesecake will still be a little jiggly when it comes out of the oven, and will set up as it cools and chills in the fridge. Remove from oven and let cool completely before removing the sides of the pan. VERY IMPORTANT! See the important link, How To Make Perfect Cheesecake for further baking, cooling, serving and freezing instructions.

Chocolate Ganache Icing

1 cup heavy cream
2 cups mini dark chocolate chips or chopped semi-sweet chocolate

Directions

In a medium sized pan, heat cream almost to a scald. Remove from burner.

Add chocolate all at once, and whisk to blend smooth and melt.

Cool enough to spoon or drizzle directly onto eclairs, brownies or cheesecake.

Chill ganache 1 hour or more to spread or pipe from a pastry bag for decorating
cakes.

Makes three cups dark Chocolate Ganache - enough to decorate a cake, and have
some left over for ice cream!

Almost Wordless Wednesday---Water Fun

The cat's out of the bag---Dad is a lot more fun than Mom!

A few weeks ago Bret took Gillian Grace for a walk after dinner while I, the loyal Webb family Sherpa, stayed behind to pack up all our gear.

Imagine my surprise when I caught up with Bonnie and Clyde a short time later and found my once perfectly coiffed daughter looking more like a drowned rat!

Now had the roles been reversed, I would have never encouraged GG's little water fountain exploration and she would've gone home as dry as a politician's humor. But as I'm quickly learning kids and husbands have a mind of their own---and sometimes, the best plan is simply having no plan at all.

Sometimes you've just got to stop and dance around in the rain, or in this case the fountain!

Sick of Ants?

It's quite possible that I get every bit as much enjoyment out of watching some of Gillian Grace's favorite television shows as she does. But it's not everyday that I, a soon to be 31 (cringe) year old momma, learns something new from an orange fuzzy Muppet on Sesame Street.

In a genius skit spoofing A&E's Mad Men, three Muppets bantered back and forth about emotions while flipping through several ad campaign posters. When the boss, coincidentally known as Don Draper, closes the scene by calling out, "Good work, sick of ants!"

Sick of ants! Are you confused?

Well, I was! I couldn't understand for the life of me what in the world sick of ants could possibly mean. I thought about it on and off for the rest of the day, in between loads of laundry, dirty diapers, and my never ending war against the always on the floor Cheerio. By the time Bret walked in the door from work, I had all but forgotten about the whole Sesame Street conundrum until I found myself watching the day's episode once again while GG drank her evening milk.

As my know it all hubby (said lovingly), explained what the Muppet had actually said, my confusion soon turned to understanding. Which was quickly followed by a cheek flushing rush of embarrassment at my stupidity that, if compared, would've made Snooki look like a Rhodes Scholar.

Sick of ants was actually sycophants. Oooohhhh, I should've have known that!

But in my defense, they do sound similar. Right?

Now should Alex Trebek ever come a' callin', and you find yourself with this Daily Double answer...
a servile self-seeking flatterer
synonym: parasite

You'll know the correct question: What is sycophant? And should you win, remember me with a little monetary cha-ching!

Good stuff, right? Sesame Street is clearly not just for the munchkins anymore!

Miscellany Monday

one. And then there was 1---Now Gillian Grace is the only munchkin on the block; school started today! In 3 short years, I'll be that nervous momma walking her sweet girl to school for the first day of prekindergarten. And yes, we are those parents and have had our daughter on the admissions' wait list since she was just days old.

Photobucket
I took GG to visit her future school and my old workplace. I visited with my teacher friends and Gillian Grace found a familiar face, our neighbor, to keep her company.
Photobucket

two. No, Tebow is not auditioning for the role of Friar Tuck in the newest Disney on Turf production of Robin Hood, but sadly is just sporting his newest do, courtesy of the Denver Broncos veterans. I heart Timmy, I really do! But, I just can't get on board with this new look. Thank goodness in a few weeks he'll be as purty as ever!

Photobucket

three. Gillian Grace is cutting 4 teeth! Oh how I wish all 20 of her pearly whites would make their debut at the same time. This every other week teething thing is wearing us thin---

four. I'm a little late in the game, but I've recently become addicted to Etsy. I've got a few items hanging out in my cart just waiting to be purchased. Among the items, are a few handpainted signs from Mama's Messages. My new bloggy friend Anna has recently opened a shop. Be sure to check out this week's awesome giveaway to win one of Anna's signs for yourself.

Photobucket

five. And whatdoyaknow? It must me Anna's day! She was the correct guesser (um, if that's even word) for Friday's impromptu giveaway. Congratulations, girl! Hope Baby W enjoys his pool as much as Gillian Grace has!

Photobucket

Photobucket
We call this GG's stinky face! She scrunches up her nose, shows her teeth, and snorts! It's a guaranteed riot every time she does it; she just looks so silly!

six. Thank you for all of your kind words and prayers for my grandmother. After a weekend in the hospital, doctors have been able to rule out any cardiac complications and instead have determined that it is her gallbladder. She is scheduled for surgery this morning, so please keep her in your thoughts.

Photobucket

seven. It wasn't me! Finally I'm not the only one around her in need of visiting the Wizard for a brain---Saturday evening, Bret sat my dinner leftovers on top of the tonneau cover over the bed of his truck while he got GG situated in her carseat. Said leftovers were discovered about 15 minutes and 5 miles later when we stopped for ice cream, sitting precariously near the edge. Now while I know that we're not the first goofs to drive with a forgotten something atop our car, we should certainly earn high marks for making it clear across town without a spill!

Photobucket

eight. I'm feeling crafty! Since receiving so many compliments on the wreath I made for Gillybean's birthday party, I've been busy making a few more. I've had several requests for Fall, football, and Halloween wreaths, so it looks like I'll be busy! (Want a custom wreath of your own? Email me and we'll chat!)

Photobucket
I took a wreath I'd made with me up to my old school this past week. I was so delighted when I heard it was hanging on the office door for Parent Preview.

Photobucket
Of course I had to make a Florida Gator wreath for the upcoming football season! My favorite part of all my wreaths has to be my handmade bows! I may not know how to sew, but I can sure make a decent bow!

Photobucket

Photobucket
I painted helmets and footballs to accent the wreath! Go Gators!

Giveaway---Mama's Messages

"Meeting" new friends is definitely one of the perks of blogging. But, it's an added bonus when I get a chance to spotlight one of my new bloggy friend's creativity through a giveaway here on Webbisodes.

I began reading Mama's Messages several months ago after discovering a link on Anna's sister's blog, Sweet Southern Prep. Anna has the most adorable son ever and has recently just opened a shop full of handpainted signs on Etsy!

To celebrate the opening of Mama's Messages on Etsy, Anna is offering one reader a sign of their choice. To sweeten the pot, Anna is also generously offering all Webbisodes readers FREE SHIPPING during the giveaway.

Here's just a little about Anna (in her own words)...

I recently became a stay-at-home Mama to a wonderful baby boy after teaching for 6 years! I started Mama's Messages as a way to make a little extra income. I wanted to do something that I really enjoyed and that would brighten up people's days! My signs are hand-painted decorative wood canvases with all types of messages for any room in your home! I can personalize any sign to your liking. I started off by making the "Shh! Baby Sleeping" sign for my home, but branched out to more signs for the nursery, college dorm rooms, sports fans, funny bible verses, and inspirational quotes. I plan on adding new stuff for the Holiday seasons soon!

Friday Hodgepodge

Friday Randomness

{one} It's Friday the 13th, yikes! I'm not overly superstitious, but let's just say if I see a black cat in my path, I plan on crossing the street!

{two} After taking the week off from running, I'm hitting the road again Monday--no excuses!

Photobucket

{three} I have learned 2 things this morning:

Never try to finish a post once Gillian Grace is awake for the day. Something that should take less than an hour, can easily take five! {Hence the later than usual Friday post!}

It only takes my daughter minutes to undo the cleanliness it took me an entire day to achieve!

Photobucket

Photobucket

{four} On a personal note, just as I was about to publish this post, I got a call from my mom---My grandmother was rushed to the hospital with chest pains just a little bit ago. Being a firm believer in the power of prayer, please include my Mama Phyllis when you say yours today.

Five Question Friday

Yay for 5QF fun hosted by Mama M.! If you'd like to participate head on over to My Little Life and link up.

{one} Have you ever visited another country?

My first trip to a foreign country was to Aruba, years and years before the world would come to know the tragic story of Natalie Holloway. Since the hubs is/was an avid water sports enthusiast, Aruba was a perfect choice! Bret did a little wind surfing while I lounged poolside! And though we've talked about taking to the skies for a little more globe-trotting in the past few years, I've yet to step foot outside the U.S. since Aruba!
{Okay so, I'm totally kidding about that last part---Bret just reminded me that we attended a wedding in the British Virgin Islands about five years ago. Whoops, my bad! That trip was awful from start to finish---mosquitoes, intense heat, sunburns, etc. etc. It's no wonder I blocked it out!}

Photobucket
Image found here

{two} Where is the strangest place you have ever been?

My life is truly boring---I cannot think of a single "strange" place that I've visited!

{three} What is your favorite season?

Honestly, I like certain things about each season and do not really have a favorite.

Summer means long days, family barbecues, and lots and lots of pool time! Fall is all about the pigskin, and not the kind that comes deep fried in a bag, but college football! Winter means cooler temps and Christmas, hands down, my favorite holiday. While Spring is beautiful with new life and an abundance of vibrant colors!

Photobucket

{four} What one song will always cheer you up?

Any song by this man...

Photobucket

Shocker, right?!

{five} What Disney character do you resemble most?

Okay, don't laugh---I'm going to say Pocahontas is the Disney character that I most resemble. And according to my Great Aunt Ruth, there may be actual proof to back up that claim. Great Aunt Ruth once told my dad that I was 1/64th Native American and had genealogical ties to Pocahontas herself. Now whether or not any of this is true has yet to be determined, but regardless, it still makes for a pretty good story wouldn't you say?

Flashback Friday

{Dad and me, 1985}
Photobucket

When you grow up along the Gulf Coast, you learn at a very early age that the only way to survive the sweltering heat is to hit the water. With summer-like weather for nine months out of the year and a pool in my backyard, I spent so much time swimming, it's a wonder my pruney water soaked skin ever recovered. One of my favorite swim buddies was my dad; we'd spend hours playing games and splashing around!

Now Gillian Grace is following in my footsteps, already developing an early love for the water and swimming.

One of the presents Gammie and Grandad gave GG for her birthday was an inflatable pool. The "ish" (fish) pool, as GG calls it, has practically become part of our evening routine, we spend so much time outside swimming.

Photobucket

And since I think this pool is just about the greatest thing since sliced bread, I'm going to give one away. All you have to do to win the "ish" pool for your lil' water baby is be the first to answer this question correctly:

How old was Gillian Grace when she took her first dip in the pool?

Happy Splashin', y'all!
